Spent all of yesterday with my two nieces, starting our morning at the farm, heading to the movies and then topping it all off with the most delicious homemade fudgesicles. (And they were healthy- say what?!) These two are so vibrant and full of life. I’ve really enjoyed watching their personalities develop over the years. Haylynn, age 10, has seriously grown into the most compassionate, witty little woman. Her maturity catches me off guard- where did that baby girl go?! Peyton, age 5, is Haylynn’s little mini. Whatever Haylynn is doing, Peyton is right behind her. At the movies, Haylynn sat back in the chairs, resting her feet on the table in front of us. (We were the only ones in the theater, don’t judge us.) A few minutes later, we look over to see Peyton almost completely flat on her back in her chair just to mimic her older sister. I’m sure she couldn’t see the screen, but she was happy. She is already the funniest kid I’ve ever met. She keeps us laughing all day long.
A few peytonisms from yesterday:
Me: Peyton, what do you want to be for Halloween this year?
P: I want to be a REAL pumpkin!
Me: Well what’s the difference between a real and a fake pumpkin costume?
P: I need you guys to get a pumpkin, take out all the insides, then slip it over my head!
(Absolutely not doing that one.)
Me: What do you girls want to be when you grow up?
H: I want to be a marine biologist!
P: I want to be a donkey!
(Keep aiming high, girls. We’re proud of y’all.)
1/2 cup cashews
14 oz can coconut milk
1 cup pitted dates
1/2 cup cocoa powder
Blend all ingredients together until smooth (adding some water if needed). Food processor is highly recommended! Pour contents into mold (we obviously didn’t have that) and freeze for about 5 hours. Enjoy!
